 INGREDIENTS :
2 lbs. ground meat
2 cans mixed vegetables
1 lg. can Ranch style beans
8 oz. can tomato sauce



PREPARATIONS :
  • Brown ground meat and drain off excess fat. Add beans and drained, mixed vegetables. Mix in tomato sauce and simmer 30 minutes. Serves 8.
HAMBURGER FOIL DINNER
  • Make patties. Put on large piece of foil. Put a lot of hickory smoked salt on patties and layer of onion. Put Worcestershire sauce, 4 good shakes. Cut carrot lengthwise, put on onion. cut potatoes in cubes. Put tablespoons of butter on potatoes. Salt and pepper. Twist foil. Bake at 350 degrees for 1 1/2 hours. Pour juice onto plate.
HAMBURGER ROUNDUP DINNER :

INGREDIENTS :

1 lb. ground beef
1/4 c. celery, chopped
1 (1 lb. 12 oz.) can tomatoes
1 c. onion, chopped
1/4 c. green pepper, chopped
3/4 c. long grain rice, uncooked

PREPARATIONS :
  • Brown ground beef and onions. Add celery, peppers, tomatoes (one 28 ounce can) stewed tomatoes with celery and peppers can be substituted and rice. Bring to boil. Reduce heat. Cover and simmer 30 minutes or until rice is tender. Salt and pepper to taste. Serves 4 to 6.
QUICK MEXICAN HAMBURG DINNER

INGREDIENTS :
7 or 8 home fries patties
1 1/2 cans refried beans
1 lb. ground chuck or round
1/2 c. celery
1/2 c. green pepper
1 onion, chopped
1 c. mushrooms
1 jar salsa (approximately)
1/2 lb. hot pepper cheese, shredded
Dorito chips, crushed (if desired)

PREPARATIONS :
  • Line 9 x 13 inch pan with enough potato patties to cover. Spread potato patties with refried beans. Brown meat, onion, celery, pepper. Add mushrooms and put over refried beans. Cover with salsa (hot, medium or mild). Cover salsa with shredded cheese. If desired cover with crushed Doritos. Bake at 350 degrees for 30-35 minutes. (All ingredients can be assembled ahead and baked later in the day).
HAMBURGER - CORN SKILLET DINNER

INGREDIENTS :
1 lb. ground chuck
1 c. bread crumbs
1 3/4 tsp. salt
1/8 tsp. pepper
2 tbsp. butter
1 can (12 oz.) corn, drained
1 med. onion, sliced
2 1/3 c. (1 lb. 3 oz.) tomatoes, drained

PREPARATIONS :
  • Mix meat, crumbs, 1 teaspoon salt and pepper. Melt butter in covered skillet and cook meat mixture, stirring frequently, until well browned. Add corn and onion, sprinkle with 3/4 teaspoon salt. Add tomatoes, cover and simmer for about 25 minutes. Makes 4 to 6 servings.
HAMBURGER AND RICE DINNER

INGREDIENTS :
1 c. green peppers
1 c. onions
1 tbsp. chili powder
1 tsp. salt
3 c. cooked rice
1 tbsp. butter
2 c. tomatoes
1 tsp. garlic salt
1 lb. ground beef

PREPARATIONS :
  • Saute green peppers and onions in butter. Add tomatoes, garlic salt and salt. Brown ground beef and add to tomato mixture with chili powder. Simmer. Add 3 cups cooked rice.

INGREDIENTS :
1 lb. hamburger
3 c. sliced potatoes
Salt (to taste)
1 sm. head cabbage
1 c. milk
Pepper (to taste)

PREPARATIONS :
  • Shred cabbage and put 1/2 of it in greased casserole. Add 1/2 of the sliced potatoes and 1/2 of hamburger, a sprinkle of salt and pepper. Add the remaining 1/2 in the same manner. Pour on the milk and bake in 350 degree oven for 2 hours.

  • The basis of a hamburger is, of course, the ground beef from which you make the “patties.”
  • In preparing the patties, I have tried all sorts of “add-ins” to mix with the beef - everything from dried onion soup mix, to eggs, to bacon fat, to grated cheese . The absolute best to add is...nothing at all! Why dilute that pure beefy taste? 

  • When making your own hamburgers, start with 1 ¼ pounds of ground beef with 20% fat content. This will be enough for four patties.
  • Normally I buy a lesser fat content, but for really tasty burgers, get the 20%.
  • (Using clean hands!) Divide the beef into four sections. Gently form each section into a round “patty” shape. It’s not necessary to tightly pack the beef into shape. In fact, you should try to handle the beef as little as possible.
  •  Each patty should measure approximately ¾ inches thick and 4 ½ inches across.
  • Wrap the extra patties in plastic wrap and freeze them for next week’s dinner.
  •  Before you start cooking the hamburgers, toast the cut side of the rolls. (Untoasted rolls get soggy very quickly.) Lay the rolls out on a baking sheet with sides and put them under the broiler.
  • It will only take a minute or two, so don’t do anything but stand there with pot holder in your hand, ready to remove the rolls from the oven. (They go from beautifully toasted to burnt in the blink of an eye. Then the smoke alarm goes off and ....you know the rest!)

  • Preheat your fry pan (on medium- high temperature) by putting a few drops of water in the pan. By the time they have evaporated, your pan will be hot.
  •  Make sure the fry pan you are using is large enough to hold your hamburgers without squishing them together.
  •  Cook the hamburgers (on medium-high) on one side then flip them once, and then cook them on the other side.
Cooking times on each side:
3 minutes for RARE (caution-see note below!)
4 minutes for MEDIUM
5 minutes for WELL DONE
  • If you want to make a cheeseburger, place a slice of cheese on the flip side about 1 minute before the burgers are done cooking. The heat from the hamburgers will melt the cheese.

1/2 cup milk
2 cups hot water
rice
cheese sauce mix
sour cream topping mix

PREPARATIONS :
  • Brown ground beef in a 10 in skillet; drain. Stir in 1/2 cup of milk, the hot water, and rice, sauce, and sour cream topping.
  • Heat to boiling, stirring occasionally.
  • Reduce heat; cover and simmer about 10 minutes, stirring occasionally, until rice is tender (sauce will thicken as it stands).
  • Meanwhile, stir 3 tablespoons milk and cheese sauce topping mix inspace a bowl for 30 seconds and set aside.

  • Ok - go ahead and laugh! This comforting soup is well received in times of sadness or trouble. I keep the ingredients in the pantry for just those times, I kid you not!!!
INGREDIENTS :
1 1/2 lbs ground beef
1/2 cup onion (chopped)
1 package Hamburger Helper mix for beef pasta (Cheeseburger & Macaroni flavor)
5 cups water
1 teaspoon dried basil
1 teaspoon salt
1/8 teaspoon pepper
1 (16 ounce) can diced tomatoes (undrained)
1 (16 ounce) can Veg-All (undrained)
2 tablespoons minced fresh parsley

PREPARATIONS :
  • Brown ground beef and onion in Dutch oven until beef is no longer pink- drain.
  • Stir in cheese sauce mix from Hamburger Helper package.
  • Stir in water, basil, salt, pepper& tomatoes, and heat to boiling, stirring constantly.
  • Reduce heat, cover& simmer 10 minutes.
  • Stir in macaroni from the Hamburger Helper package, add Veg-All, cover& simmer until pasta is tender, about 15 minutes.
Stir in parsely& serve.

INGREDIENTS :
1 pound lasagna noodles
1 tablespoon parsley
1 1/2 pounds ground beef
1 dash cinnamon
2 pounds ricotta cheese
1 dash nutmeg
2 cups mozzarella cheese, grated
1/2 cup Parmesan cheese, grated
3 eggs
1 quart spaghetti sauce


PREPARATIONS :
  • Cook lasagna as directed. Brown meat and chill. Mix ricotta, parsley, nutmeg, cinnamon and eggs. Alternate in baking pan; first, layer of sauce. Then a layer of cooked lasagna. Spread ricotta, sprinkle with some of the meat and mozzarella cheese. Repeat layers until all the lasagna is used. Make sure top layer is lasagna.
  • Top with remaining sauce and sprinkle with Parmesan cheese. Bake at 375FF for 30 minutes.
LASAGNA MANIA !

  • One of my family favorites during the winter time, it is so comfortable and keep my tummy warm. I am sure that people will follow the recipe on the back of package to make a lasagna. I did same thing with recipe,too. I have few recipes that I always have choices when I found some ingredients available in my pantry closet or in my refrigerator. I always have lot of fun to make lasagna. Sometime I will make two baking dish of lasagna, so I can put one in freezer for next Italian dinner. Sometime, I got bored with lasagna, I will look for an inspiration from other lasagna recipes and start to make new dish for dinner.
CLASSICAL LASAGNA :

1 package lasagna (500g)
1 pound lean ground beef
1 onion, finely chopped
1 clove garlic, minced
1 can sliced mushrooms (10 oz/284ml
1 can tomato spaghetti sauce (14oz)
1 can tomato paste (5-1/2oz/156ml)
1 teaspoon salt
1 teaspoon dried oregano
1 egg, beaten
1 cup creamed cottage cheese
1/3 cup grated parmesan cheese
1 package sliced mozzarella cheese
1 package spinach, thawed,chopped

PREPARATIONS :
  • Cook lasagna in a large quantity of boiling water until just barely tender; drain off most of water; add ice cubes to stop cooking. (Allow lasagna to stand in cold water to prevent pasta sticking together.) In a saucepan, brown meat with onion and garlic; drain off fat. Cook over low heat, covered, for about 5 minutes Stir in mushrooms with liquid, tomato sauce, tomato paste, salt and oregano. Simmer 15 minutes. Combine egg with spinach, cottage and parmesan cheeses. Spread 1/3 of meat sauce in 13x9 in. baking dish. Cover 1/4 of lasagna (about 5 overlapping strips.) Alternate another 1/3 of sauce and 1/4 of lasagna. Spread spinach mixture over pasta and cover with 1/4 lasagna strips. Top with remaining sauce and pasta. Arrange mozzarella cheese on top. Bake at 350F for 30 minutes. Let stand 10 minutes. before serving.

  • Making hamburger  helper is one of the easiest dinners you can make

PREPARATIONS :

  • Hamburger helper is so easy to make. You simply brown the meat, then drain off the fat. Then mix the ingredients that come with the package (seasoning, noodles or rice, milk or/and water), and let simmer. Then all that is left to enjoy. Eating this on a regular basis can get boring, however, so I would like to share how I spice it up a bit!
  • After your hamburger helper is complete, serve it in a small bowl, like a cereal bowl. Now, put a small amount of sour cream in the bowl, and serve with tortilla chips.
  • This is quite simple, yet and easy way to make an affordable, easy, and good meal even better. This meal can easily feed a family of four for under 15 bucks! That is hard to beat!
TIPS AND WARNINGS : 
  • I also like to add a little Texas Pete, as I am a huge fan of spicy food. You could even use Tabasco sauce as well.

 INGREDIENTS :

freezer bags, quart or gallon, depending on how you want to freeze the meat



PREPARATIONS : 
  • I recommend buying the 3-5lb tubes of ground beef for this. Having the meat like this makes breaking it up easier later, and I'm all for easy. Set up your crock pot, making sure you will be able to take the meat out about 6-8 hours later. I throw the meat in before work, and come home to a good smelling house. THe hamburger smells like a roast cooking.
  • Saw the tube of raw meat in half or thirds, depending on how it will fit in your crockpot. (remove the wrapping, of course) Stand the meat on the ends inside the pot, making sure it's about 2 inches lower than the lid. This helps the grease drain, and will also help with mincing the meat later. Set your crock pot on high if you're cooking it for just the afternoon. If you're leaving it for the day, "Low" is the best setting. Leave, or go about your business and let the crockpot do its thing.
  • Four to six hours later: Check the meat to see how done it is. You can usually tell by the smell. Resist the urge to break it into pieces while it's cooking. This will make draining harder later.
  • If it's done, CAREFULLY use a big spoon to remove the tubes (try not to break them up yet) into the colander. Let the grease drain into a bowl (don't let it go down your sink unless you like plumber's bills) Empty the grease/drippings from the crockpot container into another dish. Put the tubes of cooked meat back into the crockpot and mash with a spoon or potato masher. The meat now breaks up into those little pieces that go into chili, and other winter dishes.
  • After you've broken the meat up to your satisfaction, package it into smaller freezer bags of about one pound each. You can then grab one of these bags after work straight out of the freezer, zap it in the microwave, and it's dinner in, instead of carry-out and that hefty price tag.

TIPS AND WARNINGS : 
  • You can also cook chopped onions with the meat if you're an onion fan
  • For even healthier eating, mash the meat in the colander and then run it under the faucet to rinse more grease away.
  • This works with ground beef, chuck and sirloin - it all depends on your budget
  • Don't pour hot grease down the sink - any money savings will go to the plumber
  • Careful moving the tubes of meat, they are awkward and can drop. No sense in feeding the dog with your ground beef.

RECIPE FOR A BROWN HAMBERGUR :

  • Try this recipe and you’ll no longer need a can o’ joe for supper.  These no fuss sloppy joes are made quickly with handy ingredients and a little simmer time.  I almost always double or triple the recipe for freezer convenience.
INGREDIENTS :
1 lb. hamburger
1 medium onion, chopped
1 Tbsp. vinegar
1 Tbsp. mustard
1/2 c. ketchup
1/8 tsp. pepper
1 tsp. sugar
1/4 tsp. salt
  • Brown hamburger with onion.  Drain.  Combine in skillet with remaining ingredients.  Simmer about 20 minutes.

1 1/4 Tsp Black Pepper
2 Tbs Dried Parsley
1/3 Instant Onion
3 Tbs. Onion Powder

1 2/3 Cup Dry Milk

  • Mix all of dry mix together, then add 2 cups of hot water and 2 cups or noodles. you can add more or less water and noodles, proportionately, depending on how much you need to make the ground beef last.
  • Bring a boil to the water the add the noodles they should take about 20 minutes to cook then get a strainer and pour the noodles into it and let the water drain.
  • Add 1 cup of dehydrated cheese with dry mix then mix all of the ingredients together and enjoy!
